Reaping what you sow…
Earlier this summer, I put in a garden with green peppers, jalapenos, banana peppers, big boy tomatoes, cherry tomatoes, zucchini, buttercup squash and romaine lettuce. (Cucumbers too, but they didn’t make it…). Now, everything is coming in and I can’t wait to spend this weekend getting it ready for the winter.
I am not a canner. To be honest, the thought of doing it intimidates me. I have found some very helpful freezer recipes for the tomatoes to make diced tomatoes, sauce and paste. I have also sliced and frozen the jalapenos and bell peppers for later use. I pickled the banana peppers for the fridge. The zucchini is going to be sliced and blanched for veggie sides or grated for bread.
I am just so excited to put up all of these veggies for the winter, because it means HUGE savings for me at the grocery store this winter.
